Ingredients
- 2 lbs stew beef, cut into chunks
- 3 tbsp gluten-free flour
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 4 carrots, sliced
- 3 potatoes, diced
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3 cups beef broth (gluten-free)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (gluten-free)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 cup frozen peas (added at the end)
Instructions
- Toss the beef with gluten-free flour, salt, and pepper until coated.
- Heat olive oil in a pan over medium-high heat. Brown beef on all sides (optional but adds great flavor).
- Add carrots, potatoes, onion, and garlic to the slow cooker.
- Place browned beef on top of vegetables.
- In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour over the beef.
- Cover and cook on low for 7–8 hours or on high for 4 hours, until beef is tender.
- Stir in frozen peas during the last 10 minutes.
- Remove bay leaf, adjust seasoning, and serve warm.
