  • 2 lbs stew beef, cut into chunks
  • 3 tbsp gluten-free flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 cups beef broth (gluten-free)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (gluten-free)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas (added at the end)

Instructions

  1. Toss the beef with gluten-free flour, salt, and pepper until coated.
  2. Heat olive oil in a pan over medium-high heat. Brown beef on all sides (optional but adds great flavor).
  3. Add carrots, potatoes, onion, and garlic to the slow cooker.
  4. Place browned beef on top of vegetables.
  5. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour over the beef.
  6. Cover and cook on low for 7–8 hours or on high for 4 hours, until beef is tender.
  7. Stir in frozen peas during the last 10 minutes.
  8. Remove bay leaf, adjust seasoning, and serve warm.

Notes

  • Brown the beef well before adding to the slow cooker for richer flavor.
  • Use gluten-free Worcestershire sauce to keep the dish gluten-free.
  • For a thicker gravy, whisk 1 tablespoon gluten-free flour with 1/4 cup water and stir in during the last 15 minutes.
