- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (halal)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- ½ tsp black pepper
- Salt to taste
- 2 bay leaves
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
Instructions
- Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper, then sear until browned.
- Transfer beef to the slow cooker.
- Add onion, garlic, carrots, and potatoes on top of the beef.
- In a bowl, whisk beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, and pepper. Pour over everything.
- Add bay leaves, cover, and cook on low for 8 hours or on high for 4–5 hours until beef is tender.
- For a thicker stew, stir in the cornstarch slurry during the last 30 minutes.
- Remove bay leaves and serve hot.
