  • lbs beef chuck, cut into bite-size pieces (halal)
  • 3 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 45 potatoes, peeled and cubed
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 2 bay leaves
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper, then sear until browned.
  2. Transfer beef to the slow cooker.
  3. Add onion, garlic, carrots, and potatoes on top of the beef.
  4. In a bowl, whisk beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, and pepper. Pour over everything.
  5. Add bay leaves, cover, and cook on low for 8 hours or on high for 4–5 hours until beef is tender.
  6. For a thicker stew, stir in the cornstarch slurry during the last 30 minutes.
  7. Remove bay leaves and serve hot.
