  • 2 lbs halal beef stew meat, cut into chunks
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 3 medium potatoes, cubed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 3 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal)
  • 1 tbsp soy sauce (halal)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 bay leaves
  • 2 tbsp cornstarch + 2 tbsp water (optional for thickening)
  • Fresh parsley for garnish

Instructions

  1. Add beef, carrots, potatoes, onion, and garlic to the slow cooker.
  2. In a bowl, whisk together beef broth, tomato paste, halal Worcestershire, soy sauce, thyme, rosemary, paprika, salt, and pepper.
  3. Pour the mixture over the ingredients in the crockpot and stir lightly.
  4. Add bay leaves, then cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender.
  5. Stir in peas during the final 20 minutes.
  6. For a thicker stew, add the cornstarch slurry and cook until thickened.
  7. Remove bay leaves, taste and adjust seasoning, then garnish with parsley.

Notes

  • For a thicker stew, increase the cornstarch slurry or simmer longer after thickening.
  • Use halal-certified beef broth to keep the recipe halal throughout.
  • Leftovers refrigerate well for 3–4 days or freeze for later meals.
  • If bay leaves aren’t available, continue without them, though flavor may be slightly milder.
