Instructions

  1. Place potatoes, onion, garlic, celery, bell pepper, and chicken broth in the slow cooker.
  2. Stir in Cajun seasoning, paprika, thyme, salt, and pepper.
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are very tender.
  4. Use a potato masher to gently mash some of the potatoes for a thicker texture.
  5. Stir in heavy cream and milk.
  6. Whisk in the cornstarch slurry and cook on high for 20–30 minutes until creamy and thickened.
