Instructions
- Place potatoes, onion, garlic, celery, bell pepper, and chicken broth in the slow cooker.
- Stir in Cajun seasoning, paprika, thyme, salt, and pepper.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are very tender.
- Use a potato masher to gently mash some of the potatoes for a thicker texture.
- Stir in heavy cream and milk.
- Whisk in the cornstarch slurry and cook on high for 20–30 minutes until creamy and thickened.
- Taste and adjust seasoning as needed. Serve warm with optional garnish.

- For thicker soup, mash more potatoes or simmer uncovered for a few extra minutes after adding cornstarch.
