- 1½ lbs boneless, skinless chicken thighs or breasts, cut into chunks
- 3 medium carrots, sliced
- 3 medium potatoes, diced
- 2 celery stalks, chopped
- 1 small onion, diced
- 3 garlic cloves, minced
- 1½ cups chicken broth (halal-certified)
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- 2 tbsp olive oil
- 2 tbsp all-purpose flour
- ½ cup frozen peas (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken, season with salt and pepper, and sear for 2–3 minutes per side (optional but adds flavor).
- Transfer chicken to the slow cooker along with carrots, potatoes, celery, onion, and garlic.
- In a small bowl, whisk together chicken broth, tomato paste, thyme, rosemary, and flour. Pour over the ingredients in the slow cooker.
- Add bay leaf, cover, and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and vegetables are soft.
- In the last 30 minutes, stir in frozen peas if using.
- Remove bay leaf, adjust seasoning, and garnish with fresh parsley before serving.
Notes
- For extra flavor, brown the chicken before adding it to the slow cooker.
- If you prefer a thicker stew, whisk additional flour with a little broth and stir in during step 3 or 4.
- Use low-sodium broth to better control the overall salt level.
- Can substitute chicken thighs with breasts, but thighs stay juicier in slow cooking.
