Ingredients

  • lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1½ cups chicken broth (halal-certified)
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • ½ cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken, season with salt and pepper, and sear for 2–3 minutes per side (optional but adds flavor).
  2. Transfer chicken to the slow cooker along with carrots, potatoes, celery, onion, and garlic.
  3. In a small bowl, whisk together chicken broth, tomato paste, thyme, rosemary, and flour. Pour over the ingredients in the slow cooker.
  4. Add bay leaf, cover, and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and vegetables are soft.
  5. In the last 30 minutes, stir in frozen peas if using.
  6. Remove bay leaf, adjust seasoning, and garnish with fresh parsley before serving.

Notes

  • For extra flavor, brown the chicken before adding it to the slow cooker.
  • If you prefer a thicker stew, whisk additional flour with a little broth and stir in during step 3 or 4.
  • Use low-sodium broth to better control the overall salt level.
  • Can substitute chicken thighs with breasts, but thighs stay juicier in slow cooking.
