  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • 1½ cups shredded cheddar cheese
  • Optional topping: sliced green onions

Instructions

  1. In a skillet over medium heat, brown the ground beef with onion and garlic. Drain excess fat.
  2. Transfer beef mixture to the slow cooker.
  3. Add diced potatoes, black beans, corn, cream of mushroom soup, beef broth, chili powder, paprika, garlic powder, oregano, salt, and pepper. Stir to combine.
  4. Cover and cook on low for 7 hours or on high for 3–4 hours, until potatoes are tender.
  5. Sprinkle cheddar cheese over the top, cover, and cook an additional 10–15 minutes until melted.
