  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 2 celery stalks, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼½ tsp cayenne pepper (adjust to taste)
  • 1 tbsp tomato paste
  • 1 cup crushed tomatoes
  • ½ cup chicken broth
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • Cooked rice for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and celery. Cook 4–5 minutes until softened.
  2. Stir in garlic, paprika, Cajun seasoning, thyme, oregano, salt, black pepper, and cayenne. Cook 30 seconds until fragrant.
  3. Add tomato paste and stir well. Pour in crushed tomatoes and chicken broth. Simmer for 8–10 minutes until slightly thickened.
  4. Add shrimp and cook 4–5 minutes, until pink and cooked through.
  5. Stir in lemon juice and sprinkle with fresh parsley.
  6. Serve hot over cooked rice.

Notes

  • For milder heat, reduce or omit cayenne pepper.
  • Peel optional but keep tails off for easier eating if desired.
  • Stir in a little chopped parsley at the end for brightness.
  • Leftovers reheat well; store in an airtight container.
  • Serve with extra lemon wedges for a fresh finish.
