Ingredients

  • 8 oz noodles (lo mein, ramen, or spaghetti)
  • 1 lb boneless, skinless halal chicken thighs or breast, cut into bite-sized pieces
  • 2 tbsp cornstarch
  • Salt and pepper, to taste
  • 2 tbsp neutral oil (for frying)
  • Sticky garlic sauce:
  • ¼ cup low-sodium soy sauce or tamari
  • 2 tbsp brown sugar or honey
  • 1 tbsp rice vinegar
  • 1 tbsp oyster sauce (check for halal) or hoisin sauce
  • 1 tbsp sesame oil
  • 4 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 12 tbsp water (to thin sauce if needed)
  • For garnish:
  • Sliced green onions
  • Toasted sesame seeds
  • Optional: red chili flakes or sliced red chili

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. Toss chicken pieces with cornstarch, salt, and pepper until coated evenly.
  3. Heat oil in a large skillet or wok over medium-high heat. Sear chicken until golden and cooked through, about 5–7 minutes. Remove and set aside.
  4. In the same skillet, add a touch more oil if needed. Sauté garlic and ginger until fragrant, about 30 seconds.
  5. Stir in soy sauce, brown sugar, vinegar, oyster (or hoisin) sauce, and sesame oil. Let it simmer until slightly thickened.
  6. Return chicken to the pan, coating well with the sticky sauce.
  7. Add cooked noodles and toss everything together until evenly coated. Add a splash of water if the sauce needs loosening.
  8. Garnish with green onions, sesame seeds, and chili flakes if desired. Serve hot!

  • Use low-sodium soy sauce for a lighter salt level.
  • For halal compliance, ensure the oyster sauce is halal-certified or substitute hoisin sauce.
