  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

  • For the chipotle-style sauce:
  • ½ cup mayonnaise
  • 1 tbsp sour cream
  • 1 tbsp pickled jalapeño juice
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • Salt to taste

Instructions

  1. In a small bowl, mix together mayonnaise, sour cream, jalapeño juice, paprika, garlic powder, onion powder, chili powder, cumin, and salt until smooth. Set aside.
  2. Heat a large skillet over medium heat and lightly brush with olive oil.
  3. Spread a thin layer of chipotle-style sauce over one side of a tortilla.
  4. Add shredded chicken evenly over half of the tortilla.
  5. Sprinkle mozzarella and cheddar cheese over the chicken.
  6. Fold the tortilla in half and place it in the skillet.
  7. Cook for 2–3 minutes per side, pressing gently, until golden brown and cheese is fully melted.
