Description

  • 1 lb ground beef (halal)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 oz) cornbread mix
  • 1 large egg
  • ⅓ cup milk
  • ¼ cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
  3. Stir in black beans, corn, diced tomatoes, chili powder, cumin, paprika, oregano, salt, and pepper. Simmer 5 minutes.
  4. Spread the beef mixture evenly into the baking dish and sprinkle with shredded cheddar.
  5. In a bowl, mix cornbread mix, egg, milk, and cheddar until just combined.
  6. Spoon the cornbread batter evenly over the filling.
  7. Bake 30–35 minutes until the topping is golden and set.
  8. Let rest 5 minutes before serving. Add sour cream, cilantro, or jalapeños if desired.
