- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned, drained)
- 1 can (10 oz) diced tomatoes with green chiles
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp oregano
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 box (8.5 oz) cornbread mix
- 1 large egg
- ⅓ cup milk
- ¼ cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
- Stir in black beans, corn, diced tomatoes, chili powder, cumin, paprika, oregano, salt, and pepper. Simmer 5 minutes.
- Spread the beef mixture evenly into the baking dish and sprinkle with shredded cheddar.
- In a bowl, mix cornbread mix, egg, milk, and cheddar until just combined.
- Spoon the cornbread batter evenly over the filling.
- Bake 30–35 minutes until the topping is golden and set.
- Let rest 5 minutes before serving. Add sour cream, cilantro, or jalapeños if desired.
