  • 1/3 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 2 cups shredded cabbage or coleslaw mix
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 4 large flour tortillas
  • Optional: chopped peanuts or cilantro

Instructions

  1. In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic powder, and ginger until smooth.
  2. Toss the chicken with half of the peanut sauce until evenly coated.
  3. In another bowl, combine cabbage, carrots, green onions, and a spoonful of the remaining sauce to create the crunchy slaw.
