  • 2 lbs halal beef stew meat, cut into chunks
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 3 medium potatoes, cubed
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp tomato paste
  • 1 tbsp halal Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp cornstarch + 2 tbsp water (optional for thickening)
  • Fresh parsley for garnish

Instructions

  1. Place beef, carrots, potatoes, celery, onion, and garlic into the slow cooker.
  2. In a bowl, whisk together beef broth, tomato paste, halal Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper.
  3. Pour the mixture over the ingredients in the crock pot and stir gently to combine.
  4. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender.
  5. If you’d like a thicker broth, add the cornstarch slurry during the final 20–30 minutes of cooking.
  6. Taste and adjust seasoning as needed.
  7. Garnish with fresh parsley and serve warm.
