- 4 strips turkey bacon, chopped
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 4 cups chicken broth
- 1 cup milk (or half-and-half for extra creaminess)
- 1 cup shredded sharp cheddar cheese
- 1 package (16 oz) potato gnocchi
- 1 cup baby spinach (optional)
- Salt and black pepper to taste
- Chopped green onions or parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside, leaving a little fat in the pot.
- Add onion and garlic, sauté for 2–3 minutes until fragrant and translucent.
- Stir in flour and cook for 1 minute to create a roux. Gradually whisk in chicken broth and milk until smooth.
- Add gnocchi and simmer for 6–8 minutes, or until tender and slightly thickened.
- Stir in cheddar cheese until melted and creamy. Add spinach if using, and cook until wilted.
- Season with salt and pepper, then top with crispy turkey bacon and garnish with parsley or green onions before serving.
Notes
- For extra creaminess, substitute milk with half-and-half.
- Spinach is optional but adds a nice color and nutrition boost.
- The gnocchi should be tender and the soup slightly thickened after 6–8 minutes of simmering.
