- 1 lb halal chicken or beef Italian-style sausage, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp dried Italian seasoning
- ½ tsp smoked paprika
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- 4 cups chicken broth (halal, gluten free)
- 2 cans white beans, drained and rinsed
- 1 cup crushed tomatoes
- 1 cup heavy cream
- 2 cups fresh spinach
- Optional: grated Parmesan-style cheese and fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Cook for 4–5 minutes until softened.
- Stir in garlic, Italian seasoning, paprika, salt, and pepper. Cook for 30 seconds until fragrant.
- Pour in chicken broth, white beans, and crushed tomatoes. Bring to a boil.
- Reduce heat and simmer for 15 minutes to let flavors blend.
- Stir in heavy cream and cooked sausage.
- Add spinach and cook for 2–3 minutes until wilted.
- Taste and adjust seasoning as needed. Serve warm with optional garnish.

- Can be made with turkey or beef sausage if preferred; adjust salt accordingly.
