Description

This Tuscan-inspired soup delivers rich, savory depth from crushed tomatoes, garlic, Italian seasoning, and a splash of cream.   • 1 tbsp olive oil
  • 1 lb halal chicken or beef Italian-style sausage, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 4 cups chicken broth (halal, gluten free)
  • 2 cans white beans, drained and rinsed
  • 1 cup crushed tomatoes
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Optional: grated Parmesan-style cheese and fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Cook for 4–5 minutes until softened.
  3. Stir in garlic, Italian seasoning, paprika, salt, and pepper. Cook for 30 seconds until fragrant.
  4. Pour in chicken broth, white beans, and crushed tomatoes. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes to let flavors blend.
  6. Stir in heavy cream and cooked sausage.
  7. Add spinach and cook for 2–3 minutes until wilted.
  8. Taste and adjust seasoning as needed. Serve warm with optional garnish.

Notes

  • Can be made with turkey or beef sausage if preferred; adjust salt accordingly.
  • Make dairy-free: use coconut cream or almond milk and a dairy-free sausage.
