- For the cinnamon sugar coating: ¼ cup granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a large bowl, cream the softened butter and brown sugar until fluffy.
- Mix in pumpkin puree, egg yolk, and vanilla extract until well combined.
- Gradually stir in the dry ingredients until a dough forms.
- Fold in white chocolate chips evenly throughout the dough.
- In a small bowl, mix sugar and cinnamon for the coating.
- Scoop tablespoon-sized balls of dough and roll them in the cinnamon sugar coating.
- Place on the prepared baking sheet, spacing about 2 inches apart.
- Bake for 10–12 minutes, or until edges are set and centers look soft. Cool on the pan for 5 minutes before transferring to a wire rack.

- Soft cookies rely on not overbaking; remove cookies when edges are set but centers appear slightly undercooked.
