Instructions
- Heat olive oil in a large pot over medium heat. Add ground chicken, onion, garlic, Italian seasoning, salt, and pepper. Cook until meat is browned and onions are soft.
- Pour in chicken broth and bring to a boil. Add broken lasagna noodles and cook until tender, about 10–12 minutes.
- Stir in milk or cream and reduce heat to low. Add ricotta, mozzarella, and Parmesan, stirring until melted and creamy.
- Add spinach (if using) and cook until wilted.
- Taste and adjust seasoning. Serve hot, garnished with fresh basil or parsley and extra Parmesan if desired.
Notes
- Substitute ground turkey for chicken, if desired.
- For a lighter version, use milk instead of cream and reduce cheese slightly.
- Can be made in advance and reheated; add a splash of broth if it thickens too much.
