  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup apple cider, reduced for stronger flavor
  • 1 tsp vanilla extract
  • 1/2 cup finely diced apple, peeled
  • Glaze: 1 cup powdered sugar
  • 23 tbsp apple cider
  • 1/4 tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a saucepan, simmer apple cider over medium heat until reduced to about 1/4 cup. Cool slightly.
  3. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  4. In another bowl, cream butter, brown sugar, and granulated sugar until fluffy.
  5. Beat in egg, reduced apple cider, and vanilla.
  6. Gradually mix in dry ingredients, then fold in diced apples.
  7. Scoop dough onto baking sheets and bake 10–12 minutes until set.
  8. Whisk glaze ingredients and drizzle over cooled cookies.

Notes

  • Reduce apple cider until about 1/4 cup for stronger flavor.
  • Chill the dough slightly if it’s too soft for easier scooping.
  • Cool cookies completely before glazing to prevent glaze from running.
  • Store in an airtight container for up to 3 days or freeze for longer storage.
