  • 2 lbs beef chuck roast
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • 3 cups low sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 4 hoagie rolls
  • 8 slices provolone cheese

Instructions

  1. Season chuck roast with salt, black pepper, garlic powder, and onion powder.
  2. Heat olive oil in a skillet over medium high heat and sear the roast on all sides until browned.
  3. Transfer roast to the crockpot. Pour in beef broth and Worcestershire sauce. Sprinkle dried thyme over the top.
  4. Cover and cook on low for 8 hours or until beef is tender and easily shredded.
  5. Remove beef from slow cooker and shred with two forks. Return shredded beef to the juices to soak up flavor.
  6. Split hoagie rolls and fill with shredded beef. Top each with provolone cheese.
  7. Broil sandwiches for 1-2 minutes until cheese is melted and bubbly.
  8. Strain some of the cooking liquid to serve as au jus for dipping.
