Ingredients
Scale
- 2 lbs beef chuck roast
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp olive oil
- 3 cups low sodium beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 4 hoagie rolls
- 8 slices provolone cheese
Instructions
- Season chuck roast with salt, black pepper, garlic powder, and onion powder.
- Heat olive oil in a skillet over medium high heat and sear the roast on all sides until browned.
- Transfer roast to the crockpot. Pour in beef broth and Worcestershire sauce. Sprinkle dried thyme over the top.
- Cover and cook on low for 8 hours or until beef is tender and easily shredded.
- Remove beef from slow cooker and shred with two forks. Return shredded beef to the juices to soak up flavor.
- Split hoagie rolls and fill with shredded beef. Top each with provolone cheese.
- Broil sandwiches for 1-2 minutes until cheese is melted and bubbly.
- Strain some of the cooking liquid to serve as au jus for dipping.
Notes
- For best flavor, sear the beef well to develop color and fond.
- Use low-sodium beef broth to control saltiness.
- Reserve some au jus for dipping and adjust salt after tasting.
- Toast rolls lightly for extra crunch, or skip for soft sandwich.
- Leftover beef can be stored in the juices and reheated gently.
