Ingredients

  • 1 cup smoked beef, cooked and shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 bell pepper, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 10 egg roll wrappers
  • Oil for frying

Instructions

  1. In a large bowl, combine smoked beef, black beans, corn, bell pepper, cheese, cumin, chili powder, and salt. Mix well.
  2. Lay an egg roll wrapper on a clean surface. Place 2 tablespoons of filling in the center.
  3. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal edges with a little water.
  4. Heat oil in a deep pan over medium heat. Fry the egg rolls until golden brown, about 3‑4 minutes per side.
  5. Remove and drain on paper towels. Serve warm with your favorite dipping sauce.
